Enable/Disable the generic categories when budgeting

We would like the option to shorten the list of categories in the drop down list that appear when budgeting. It would be useful to be able to show / hide the individuals, or the categories depending on how we would like people to quote…. currently those quoting are offered everything which is too much choice and means training is required to confirm how we would like people to do it….
